Depending on the protein powder you use, you may need to add some moisture to your cookie recipe with protein powder.

You want a slightly sticky protein cookie batter, and you can add water in 1 tablespoon at a time until you reach the consistency you need.

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a medium bowl combine the coconut flour, protein powder, almond butter, applesauce and baking soda.

I used (plant based) Orgain Protein Powder to make these protein cookies, but you could use your favorite protein powder.

Special Tip: Each protein powder scoop is a little different in size, so look at the back for grams per scoop or use 1/2 cup and 1 teaspoon to get to the 69 gram measurement.
