Make the glaze:

  1. Combine the molasses, bourbon and mustard in a small bowl. Season the pork chops with salt and black pepper, then brush with half the bourbon mixture. Preheat broiler on high.

Sear the pork chops:

  1. In a cast iron skillet, heat ½ tablespoon of the olive oil over medium-high heat. Add the pork chops and cook until 2 to 3 minutes per side, until pork chops are golden brown. Transfer the pork chops to a plate.

Cook the beans:

  1. Add the remaining olive oil to the skillet. Add the baby bell pepper, green onion and garlic. Cook, over medium heat, for 3 minutes, until the vegetables start to soften..
  2. Add great northern beans, paprika, thyme salt, and pepper to taste. Saute for 2 minutes stirring occasionally.

Glaze the pork:

  1. Place pork chops on top of the bean mixture and pour in any accumulated juice over pork. Brush the chops with the remaining glaze.
  2. Place the skillet under the broiler. Broil 2 to 5 minutes, until an instant-read thermometer inserted into a pork chop registers 160°F.
  3. Let pork rest 5 minutes before serving
